Spicy Cauliflower Steaks

Ingredients

  • 1 medium head of cauliflower
  • 2 tbsp of Spicy RubRub
  • 1/4 cup olive oil
  • 1/2 tsp salt

Directions

  1. Heat your oven to 400°F and place a shallow pan with 2 cups of water on the lower rack (for that perfect, steamy roast). Line a baking sheet with parchment paper.
  2. Trim the leaves of the cauliflower then slice through the core into 1-inch thick "steaks." Expect a few florets to break off (those are fair game, too).
  3. Whisk olive oil, Spicy RubRub, and salt together in a mixing bowl. Brush both sides of each steak and stray florets until they glisten. Arrange on the parchment-lined sheet tray.
  4. Bake for 15 minutes, then flip and roast another 10-15 minutes until golden and tender with crispy, caramelized edges. Serve with yogurt or tahini.
